Six Fun Recent Breakfasts

Ehh!! Let’s celebrate some food

I’ve put together some pretty cool breakfasts recently, so I’m here to share them with you. Hope you get some inspiration!

I’ve been trying to stretch my taste buds. Partly for the creative aspect, partly for the curious aspect, and partly because I havn’t really been craving much of anything lately and have been feeling a lack of excitement in the food department. 


1) 
Arman’s Sweet Potato and Cheddar Pancakes

I’ve only had these on my “to make” list for, er, years… but every time I go to make them I forget that they call for cauliflower. D’oh. But that also means you are getting three different veggies in one patty: sweet potato, cauliflower and spinach. They are gluten free and can be as cheeeeeeesy as you want them.

My favorite way to enjoy them has been topped with plain full fat yogurt (unpictured) and strawberries. 

2) Avocado + Cheese + Tomato + Toast

This little snack plate is definitely my favorite combination at the moment. My favorite oat bread spread with grass fed butter, then smothered with smashed avocado, old white cheddar, tomato and a generous sprinkling of salt. The perfect bite.

3) Good ol’ yogurt bowls

Especially after a few solid days of cafe baking, a plain healthy yogurt bowl is what my body asks for.

My favorite way to eat oats right now is to quick soak them in the morning – putting them in water (along with cinnamon, vanilla, salt and a spoon of yogurt), turning the water to boil, and then taking the pot off the element and letting it sit for an hour or more. I love the resulting  consistency and the soaking method makes all the nutrients easier to digest. Adding in a spoon of yogurt at the beginning adds in some probiotics to increase the break down of phytic acid even more. Then all I need is to top them with some plain grass fed yogurt, banana, and my favorite of the B Happy Peanut Butters: Go Lucky.

5) Breaded Butternut Squash + Fried Eggs + Greens

Yep. Some deep fried tater-tot like breaded butternut squash and some perfectly fried farmers eggs. Fresh farmers eggs have so many benefits, but one is definitely the fact that they cook up so much better than cheap eggs. Plus some greens on the side as some days recently have been quite lacking in the veggie department.

5) Store Bought Belgium Waffles

Topped with a dollop of plain yogurt, a drizzle of pure maple syrup and a hefty dose of peanut butter. Fruit on the side and smushed up all together onto my fork and into my belly. Mmmm.

6) Assorted Buns + Nut Butters Plate

I picked up a sample bag of different types of buns at the farmers market last week, so I’ve been “sampling” them out on snack-y breakfast plates. This day’s was one beet roll, half a sweet potato roll, and one  – I think – challah roll? This one was actually my favorite. Spread with almond butter and cashew butter, side of strawberries.

    I love all of these! Especially those breaded butternuts. SUCH a great idea! Snack plates are my jam too. We often have those for dinner. Because I’m lazy.

      Which is funny because I actually find snack plates a lot more labour intensive to put together! Aha. Regardless, I think they are fun.

    Wow you do not make breakfast boring at all. That breaded butternut squash looks like mozzarella sticks. YUM! Favorite breakfast lately might be…. overnight oats or yogurt bowlzzz…

    Oh my gosh! So many buns! So many nut butters! 😉 It’s so fun that the farmer’s market has started up. I haven’t had a chance to go yet this year, but I plan to when I get back to Ft. Collins. So exciting!
    You are so creative with your breakfasts. I alternate between cereal and toast.

    I wouldn’t mind just eating like 3 avocados for breakfast. Mmmmm! Although I would need a lil extra protein… So throw some chicken into the mix and I am a happy girl.

    Those buns – I want one of each – actually multiple of each! I love seeing posts like these for inspiration – I love my oatmeal, but sometimes, I want something like those store bought belgian waffles. Perfect for all the PB and toppings.

      Even something so “simple” as a store bought waffle can feel like a real treat – especially when you are routine to the regular oats and yogurt etc.

    These all look great and they seem pretty quick and easy to put together too! Snack-y meals–throwing things together–are seriously some of my favorites!
    Hmm, now I’ve GOT to try that method of making oats. Never seen it before but I trust you. You have yet to fail me! ?

      Oh man I do not remember the last time I’ve actually spent time PREPARING a meal. I’m serious. I havn’t had any desire. Everything has been consciously quick and easy. But obviously this is proof that quick and easy doesn’t have to mean boring and un-delicious!
      Even that oat trick is my way of not working for more than three minutes…. haha. It takes out all the leg work.

    i’d be pleased as punch (what does THAT mean??) to have any of those brekkie options. i’m terible with breakfast. these days even more so, grazing on graham crackers or whatever my babe rejects. she’s not much of a breakfast person and i can’t say i’m a good role model lately. i go through phases but if left to my own devices i’ll skip breakfast and nibble on snacks till lunchtime. when i’m really ON and firing on all cylinders i will do a smoothie or eat leftover dinner 🙂

      Leftover dinner is totally in my okay books for breakfast. Especially if its pizza. Tell me if you had leftover pizza in your fridge you would NOT be able to by pass breakfast….

    Your avocado breakfast looks a lot like my standard one right now: a full avocado, turkey, and either some bread or sweet potato or tons of steamed veggies. LOVE. Also, breaded butternut? Yes, please!

    What the heck, Cora. Now I’m super hungry for breakfast…and it’s like 10:00pm. Everythang looks dreamy. Breaded and fried squash sounds awesome! Did you come up with this? If you did, patent it ASAP. I see this new food fad being highly lucrative. I need to work on expanding my breakfast horizons. Lately, it’s been oatmeal + nut butter + berries, which is yummy, but after a solid 2 months of oats + nut butter + berries, my taste buds are begging for something new. Also, I’m usually all for sweet in the morning, but I want to dabble with savory things. Is there a good, middle ground recipe to start with to ease me into the savory side? Suggestions?

      Ooooo I feel like I was in your exact position with the whole sweet vs savory thing half a year ago. It was ALWAYS only sweet things for breakfast… and then I had a cheese bagel… and then a cheese and chive scone… and I realized the savory route was pretty damn good, too.
      Are you an egg fan? A simply runny egg yolk on buttered toast always reminds me how much I love them. And I always pair it with berries or apple so I get that perfect sweet and savory mix. Or those little egg bakes are so super easy and you can put anything you like in them. Paired with toast and fruit, again.
      Nothing wrong with the oats/pb combo though. Obvs.

    I have just finished my breakfast – thai omlette with Brussels sprouts and tumeric rice – oh and lashings of siriracha!!
    I have the same breakfasts week in and out and love them! Different every day with only 2 repeated each week. I love knowing that I don’t have to think about brekkie or make a choice each day. When I do have to choose I take forever! Ha!

      I think I’ve asked you this before, but I’m still unclear as to what exactly makes an omelette a THAI omelette!? Tumeric rice though… yes. I need to do this. Some of that topped with a runny egg yolk is sounding fabulous right now.
      See, I hate choosing. But I also have a breakfast attention span of one day, so I get bored and can’t do the same thing twice in a row!

        Ok so thai omlette. You take 3 whole eggs and whisk in a bowl. Add 1 tablespoon of tapioca flour/starch and 1 tablespoon of fish sauce. Whisk together. Heat 5g of ghee in a pan until it’s super hot. Add egg mix, cook then flip. It won’t take long to cook as the pan is so hot so go for less time than more. So so good!
