Welcome to Friday, friends. You made it!

No more heaviness from me this week. I just want to celebrate some delicious eats.

It’s been a month since my last Lately: Kitchen Creations post, so that means a whole month of new recipe finds and kitchen experiments that I must share.  As usual, there were a lot of favorites which will now become part of the regular rotation family.  

Reeces Pumpkin Peanut Butter Cups from Chocolate Covered Katie

These little guys…… oh man. These may be the best little treat ever to grace my freezer. I may say that a lot, but this time guys…. really. I’m no stranger to freezer chocolate, but these are by far better than any of my own creations.

I didn’t think I’d end up taking pictures of them, so I didn’t really try to make them look nice (aka most of my “filling” ended up on top) but it really doesn’t matter because they taste the same and that taste is phenomenal. And they’re so easy – of course. The white you see on top is a mix of freezer condensation and some rock salt I sprinkled on for a little addition.  Make these.

Based on the amount of times you’ve seen me make these no bake fudge brownies, its no surprise they are a top favorite of mine. So I thought maybe it was time I expanded my horizons – just a titch – and do a little experimenting. I omitted some of the dates for 3 Tbsp pumpkin puree and added 1 tsp pumpkin spice to the base. Then, I swapped the chocolate chips in the ganache for – get ready for it – peanut butter chips! I know – crazy right!? And another 1 tsp pumpkin pie spice.

If you are feeling peanut butter, these were definite winners. I think I’m still partial to the triple chocolate goodness though.

Egg Bake Muffins

Why do I always think I’m not really an egg fan when obviously – based off every single time I have eggs for breakfast I love them – I am. And why did it take me so long to try the egg muffin thing? The idea never really appealed to me… #facepalm

These guys are SO easy and you honestly can put anything and everything into them without a recipe. Though, I hit up this recipe from kimscravings and this recipe from skinnytaste to get myself started. I’ve made a couple batches and they’ve stored so well in the freezer. My favorite were these sweet potato, spinach, cheddar guys. I still think this plate was my favorite breakfast of the month.

Ellie’s Cornmeal Pumpkin Scones

Ellie and I are both self professed lovers of scones. And cornbread. So this recipe goes without saying.

Its such a cool recipe. Gluten free and vegan. There is no milk, eggs or butter. Pumpkin, cornmeal and chickpea flour are the main stars – and somehow it totally works. If you are a grainy cornbread fan, you’d definitely like these.

I was drawn to this recipe when I saw that the only ingredients were: pumpkin, eggs, honey and cocoa powder. Seriously. That’s it. Four ingredients! (five if you include the thrown in chocolate chips). That makes these guys not only gluten free, but totally grain and flour free. How cool is that!?

No doubt these guys come out suuuupper fudgy. And crazy light too! Like little fudgy air pillows.  I topped mine with a mixture I threw together made of 1 tbsp honey + 2 tbsp peanut flour + 1 tbsp water and swirled it into the top for a little peanut butter glaze finish. It worked brilliantly!

Suz’s Copy Cat Soy Chorizo with TVP

Yessss. I had been eyeing this recipe for a long while, so was totally pumped when I found a 1/2 full bag of TVP hiding in the back of my cupboard. TVP is so ridiculously easy to work with. Its vegan, it lasts forever, and its really high in protein. I added sundried tomatoes and chopped red pepper to my batch to amp it up just a touch.

I’ve been throwing it onto mostly taco/burrito bowls with lots of cheeese. But my favorite use for it has been sloppy joe style. Cause’ I love me some sloppy sloppy joes.

  1. I went another month without trying a new recipe! That really grinds my gears as I love to cook. But I am making it a point to try something new in the next few weeks – actually I will have to as I am going to bake something for David’s birthday! Where do I start though!? I need something he can take into work with him so cookies, traybakes, brownies etc would be better. And I can’t get tinned pumpkin here so that discounts pretty much most of the tasty recipes I am seeing right now… Any tips?

    • Oh but girl you’ve been away and busy… the time will come when you aren’t off having so much fun! πŸ™‚
      As for ideas… you can never go wrong with brownies? What about a nice moist zucchini brownie? Amanda from runningwithspoons posted one recently. OH or what about Meg’s recent magic bars!? Those look incredible. And no pumpkin in site!

    • Oh that makes me sad Kat! I’ve had a couple gluten free scones that have honestly been my FAVORITE ever. You just need to find a GF cafe. And then get experimenting to make one even better!!

    • I always wanted to make them too, and always felt like they’d take too much time or be too finicky. When really they were pretty damn easy (as long as you don’t care about how they look…). Egg muffins are completely fail poof!

  11. That vegan chorizo is yet another reason I ‘need’ to finally buy some TVP again [which has been on my list for months and months]. Mmh.
    Also: wow. The original brownies are delicious as is but peanut butter topping? Hellooo! Sadly, peanut butter chips are another item nowhere to be found over here.

    • TVP is SO inexpensive (at least it is here)… I hope its the same for you, as you will be so pleasantly surprised. The peanut butter topping was good, but your original is definitely still the winner. Taking no credit here… the incredible invention which I’m now addicted to is all you girl.
      When you come visit Canada we are going to go crazy with all the ingredients you don’t get there…

  16. Pumpkin peanut butter cups?! Yes PLEASE. You also reminded me that I haven’t made TVP in forever. There was a taco place nearby that used to serve TVP tacos and they were so good but they just took them off the menu! I might have to make my own πŸ™‚

    • Why would they do that!? TVP is such magic… you can make it taste like whatever you want and the texture can definitely fool anyone into thinking its meat. Please make those pumpkin butter cups… SO GOOD

    • Yay I do hope you carve out some time for yourself! Baking is so therapeutic for me. Sadly I’m entering a couple weeks where I won’t have ANY time to bake, so I’ll look back on this time I had very fondly (and its a good thing I made some big batches to get me through!). Have fun!
