What happens when a lady has no desire or time to blog about food for a couple of weeks? …. she brings it all back in a catch up recent eats post!
In celebration of lighter things – and just for a little much needed fun for both you and I – I’m sharing some of the good eats I’ve been enjoying over the last few crazy weeks. There’s been some obvious cravings and repeats, but lots of good things to remember.
Still going really strong on those intense oats craving.
1/2 cup oats cooked with whipped frozen banana / cinnamon and vanilla / B-Happy Toffee Crunch Peanut Butter from my mega exciting prize!
Overnight oats made with almond milk and Liberte chai spice yogurt / apple / cinnamon / banana / peanut butter
But there’s also been this big craving for all things potatoes, eggs and sauerkraut. Aka… salt.
Roasted potatoes / 2 scrambled eggs / sauerkraut / ketchup
All the sandwiches outside. I’m taking any chance I can get to eat out in the sun.
Roast beef / havarti / mayo / dijon / tomato
Leftover easter ham / mustard / tomato / saurkraut
As I was making this I totally thought, “this is going to be so gross.” But it was surprisingly delicious.
Went through a big ol’ batch of Kylie’s coconut flour chocolate chip cookies
Chocolate covered coffee beans have been quite the gift from above
Dinners have been mostly in tupperwares at the makeup table before shows.
But Easter weekend I was very adamant about having a traditional Easter meal. Dan and I picked up a ham and I whipped up my favorite scalloped potatoes from the best potato connoisseur I know. Dan said he didn’t like scalloped potatoes. Ha. Wrong.
Ham / Scalloped Potatoes / Sauteed Green Beans and mushrooms / Sauerkraut / Dijon
And then there were lots of leftovers for lil’ ol’ me…

There’s been a few rounds of sushi, both on my own and with the parents

On another night my parents and I took home some “custom bowls” from Urban Herbivore, which really are like 3 meals in one. To say I had leftovers is a wee understatement. So those have been treating me well over the last couple days, including last night where I celebrated my first evening I’ve had to myself in over two weeks. Ahhh. Shiraz.
This particular bowl had purple rice / kale and arugula / sweet potato / green pea pesto / beets / chickpeas / carrots / broccoli / BBQ tofu and a ginger sesame dressing drizzled on after picture
Farmers Markets Treats
I didn’t have time to make my own carrot cake for Easter as I wanted, so thank you Farmers Market. It’s still on the make-list, however. No way is carrot cake just an Easter thing.
Vegan/Gluten Free Chocolate Carrot Cake, which I de-vegainzed by adding my own cream cheese icing (regular cream cheese + coconut yogurt + almond milk + lemon juice + stevia)
Now though, I have a freshly made, from scratch apple strawberry crisp AND a new bucket of vanilla ice cream in my freezer. Just waiting for me to dig in…

During the shows I’d get home around 10:30 and was always starving, no matter the dinner I had eaten earlier. Night cereal cravings have become a real thing, and that oat craving seems to get stronger in the evenings.
Makeshift Oatmeal Chocolate Chip Cookie: 1/3 cup oats / lots of almond milk / tbsp peanut butter / stevia / vanilla / cinnamon / chocolate chips / let to sit for an hour or more
Same as above + Enviro kids peanut butter pops / more almond milk
