Recent Eats Catch Up (What I Ate Wednesday)

What happens when a lady has no desire or time to blog about food for a couple of weeks? …. she brings it all back in a catch up recent eats post!

In celebration of lighter things – and just for a little much needed fun for both you and I – I’m sharing some of the good eats I’ve been enjoying over the last few crazy weeks.  There’s been some obvious cravings and repeats, but lots of good things to remember.

Breakfasts:

Still going really strong on those intense oats craving.

1/2 cup oats cooked with whipped frozen banana / cinnamon and vanilla / B-Happy Toffee Crunch Peanut Butter from my mega exciting prize!

Overnight oats made with almond milk and Liberte chai spice yogurt / apple / cinnamon / banana / peanut butter

But there’s also been this big craving for all things potatoes, eggs and sauerkraut. Aka… salt.

Roasted potatoes / 2 scrambled eggs / sauerkraut / ketchup

Lunches:

All the sandwiches outside. I’m taking any chance I can get to eat out in the sun. 

Roast beef / havarti / mayo / dijon / tomato

Leftover easter ham / mustard / tomato / saurkraut 

As I was making this I totally thought, “this is going to be so gross.”  But it was surprisingly delicious. 

Snacks:

Went through a big ol’ batch of Kylie’s coconut flour chocolate chip cookies

 Chocolate covered coffee beans have been quite the gift from above

Dinners:

Dinners have been mostly in tupperwares at the makeup table before shows.

But Easter weekend I was very adamant about having a traditional Easter meal. Dan and I picked up a ham and I whipped up my favorite scalloped potatoes from the best potato connoisseur I know. Dan said he didn’t like scalloped potatoes. Ha. Wrong.

Ham / Scalloped Potatoes / Sauteed Green Beans and mushrooms / Sauerkraut / Dijon 

And then there were lots of leftovers for lil’ ol’ me…

There’s been a few rounds of sushi, both on my own and with the parents

On another night my parents and I took home some “custom bowls” from Urban Herbivore, which really are like 3 meals in one. To say I had leftovers is a wee understatement. So those have been treating me well over the last couple days, including last night where I celebrated my first evening I’ve had to myself in over two weeks. Ahhh. Shiraz.

This particular bowl had purple rice / kale and arugula / sweet potato / green pea pesto / beets / chickpeas / carrots / broccoli / BBQ tofu and a ginger sesame dressing drizzled on after picture 

Desserts:

Farmers Markets Treats

I didn’t have time to make my own carrot cake for Easter as I wanted, so thank you Farmers Market.  It’s still on the make-list, however.  No way is carrot cake just an Easter thing.

Vegan/Gluten Free Chocolate Carrot Cake, which I de-vegainzed by adding my own cream cheese icing (regular cream cheese + coconut yogurt + almond milk + lemon juice + stevia)

Now though, I have a freshly made, from scratch apple strawberry crisp AND a new bucket of vanilla ice cream in my freezer. Just waiting for me to dig in…

Bedtime Snacks:

During the shows I’d get home around 10:30 and was always starving, no matter the dinner I had eaten earlier.  Night cereal cravings have become a real thing, and that oat craving seems to get stronger in the evenings.

Makeshift Oatmeal Chocolate Chip Cookie: 1/3 cup oats / lots of almond milk / tbsp peanut butter / stevia / vanilla / cinnamon / chocolate chips / let to sit for an hour or more

Same as above + Enviro kids peanut butter pops / more almond milk

Vegan Cookie Dough Oatmeal Breakfast Bar / 2% yogurt mixed with chocolate stevia / banana / blueberries

Alright, that’s a good sample of what’s been going down lately. Literally… ha. Hope you enjoyed my recent eats and maybe got a new craving or two.

    Oh stars, I had a good chuckle when yiu said you thought how it might taste gross as you made that sandwich, made it anyway, and it luckily tasted good. I can’t tell you how many times I’ve done that!! It’s like most of my personal meals are dares to see if they’re edible. 8/10 times they are quite delicious. But every now and then I’m like whoa, what the….
    I’m going through an intense phase of mixing crunchy PB with honey into a slurrie by adding hot water, then crumbling vegan oatmeal cookies into it, then dollops of yogurt. It ends looking gross but tastes like MF heaven. Try if you dare 🙂

    GURRRRRRRRRRRRL I want it all. I’ve been eating anything and everything as well. last night I had 4 servings of cereal, for no other reason than that I wanted to and it was so good. That was after family meal and a mini bar. Best things that I’ve shoved in my mouth recently (LOL) was that buffet from Cavalia 😀

    Yum!!!! I’m still in oat mode too but have been adding in some smoothies/toast as things warm up! I’ve also been doing a lot of iced coffees.
    Lunches and dinners have been lots of pasta with veggies, tacos (of course!), and I’ve been starting to crave more salads probably because of the weather!

    Mmmm everything looks amazing girl!! I’ve actually been eating a TON of cereal lately. I never buy it because its so expensive, however I just found some gluten-free options on sale for buy one get one free so I was like, “why not?!” And now I’m mowing through the boxes lol

    I’ve been putting chocolate covered espresso beans in my oats in the morning. Such a great idea! I have been loving tempeh in everything recently and also a product called Beyond Meat. The chicken strips are fabulous and we’ve got them for a monthly special at work…so I’ve only got a few days left to enjoy it 🙂

    What I want to eat right now? Some of the carrot cake you bought! And I love the addition of icing, carrot cake needs frosting!
    On repeat right now – the koala crisp (choc rice cereal) by enviro kids that I basically have every night before I head to bed. It’s so comforting!

    How do your sandwich pictures look so good?! Whenever I try to take mine, the sandwich falls apart on me. Teach me your ways! ? I’ve also gotta try that quick cookie recipe. You and your creative recipes!

    Strangely despite the warmer weather, I’ve been craving spicy food. And have been on a baking kick too. Bring on the homemade breads!

    Now these were def worth the wait! Those cookie dough cereal bowls look and sound SCRUMPTIOUS! As for me…a lot of hte same old, same old. Lovin’ my black beans smashed with oregano, lots of spaghetti squash, way too many avocados to count and plenty of nightly trail mix!

    Oooh I’ve been loving chocolate covered coffee beans too! I accidentally ate a ton of them last week around 7pm though and didn’t sleep all night haha. Too good!!
