Snippets From My Week

After Dan and I treated ourselves to a Thanksgiving Dinner of vegan rueben sandwiches and onion rings (hey last year it was a bottle of wine and take out pizza on a beach… you do know we are classy, don’t you?) I saw these vegan bagels at Bloomers and couldn’t not pick one up.

I mean, that is the softest, doughiest bagel I have ever seen. Look at that sucker!

I bought whipped cream cheese for the first time. I’ve always been curious about it, though I only really picked it up because it was on sale and cheaper than the regular stuff. I needed some topping for dat bagel action. 

I baked possibly the best – read: softest – muffins I think I ever have created. They shocked me. Pumpkin carrot ginger bran. I need to share the recipe with you. 

I also threw together a frittata using a bunch of odds and ends in my fridge that were making me itch. An easy mix of eggs and egg whites, milk, roasted butternut squash, kale, feta, salt, pepper and mixed herbs. A cheesy success. 

A new favorite quote – and quote master –  I found this week

I took myself out for another one of those moments I talked about this week. A couple hours at a window with an americano and pumpkin cookie to just sort of…get away…from the stress of apartments and life. The cafe was playing old school jazz standards. It was so peaceful. 

Pencil crayons on streetcars should be a more frequent thing

I steamed up the rest of the gigantic kabocha I got from the farmers market two weeks ago. It actually baffles me how, not only am I not sick of steamed kabocha, but that I actually continually and intensely crave it each and every day. Kabocha + peanut butter. Literally a pairing I think I will never get sick of. Eternal thanks to this lady for suggesting the steamer route. 

My life has some potentially large stressful things in it right now. And as you know, a whole lot of mess. These little snippets of normalcy keep me going. They’re the things that keep me happy and grounded.

    Whipped cream cheese is where it is AT. There is an amazing vegetarian place here that does a reuben (and the best sweet potato fries) and it has been far too long since I have been there!

      I’m sure real reubens are great too, but something about the vegetarian version is just SO DAMN GOOD. I think you should return to that restaurant asap.

    Oh my goodness, you must share the recipe for those scrumptious pumpkin carrot ginger bran muffins! Now that fall is in full, full swing, I can’t get enough pumpkin and carrot. I bet those were so tender and delicious. Loving the steamed kabocha and streetcar pencil crayons thing, too!

    Hmmm it’s not often you find a doughy bagel. The side pic makes it look like a pillow. Glad your Thanksgiving was celebrated with good food and company. That’s what it’s all about, right? I still have yet to try kabocha. Talk about being a mess. Is it sweeter than butternut squash? What’s the consistency like?

      I know right? I’m mostly a sucker for montreal style bagels – but I couldn’t pass up the chance to try something that looked THAT fluffy.

      Oh gosh Kabocha is hard to explain. I think its the texture that gets me most… its extra starchy. Much stodgier and creamy than any other squash out there. I wouldn’t say it’s sweet. But it does go incredibly well with peanut butter.

    my hubby has been taking a bagel and cream cheese for breakfast each morning and I’m just over here like, “whyyyyyy can’t I find it within myself to fork over the money for GF bagels?!” I’m so cheap – it’s sad lol WHICH is why for every holiday/birthday my husband buys me a “foodie” basket filled with all the goodies I never buy for myself lol

      FORK OVER THE MONEY GIRL. Just once. Maybe, what I like to do, choose ONE thing out of your usual “buys” to not buy this month. Then its just a matter of placing that money elsewhere, not losing it.

    OH MAN. I have tried kabocha, but that kabocha and peanut butter combo sounds absolutely amazing! And I love how you took yourself out for some more of those quiet moments.

    Ok, and whipped cream cheese is SO fluffy; it’s just the best isn’t it? Plus, how do you find these amazing doughy bagels?

      Of all people YOU need to put peanut butter on your next kabocha!!!

      That bagel was a once in a life time thing. I have never seen one like that before

    squash and peanut butter??? wow i’m just speechless. i can’t even imagine the flavor. is that savory? sweet? i love both foods but haven’t had them married 🙂
    my favorite snippet of the week was introducing my mini to the glorious magic of bubble baths. she finally appreciates them and loves them, or i should say is entertained by them. this brings me joy, watching her play with bubbles on her hands and trying to figure out how to shake them off because they sure do get sticky!
    another nice moment was a morning run where the weather was suddenly cool and i got to be free.. it was quite glorious. so many nice moments this week, as well as so many crazy moments of total panic. its’ just one of those weeks i suppose? i’m glad it’s getting better. cheers to you!

      I think its the fact that its EVERYTHING – savory, sweet, salty, starchy – all together in one that makes the combination soooo gooooood.

      Eeee babies in baths! What a wonderful discovery for them. We all need to enjoy more bubbles I think <3

    I never get sick of squash either and cook up a big batch every Saturday. Easy weekday lunches for the win! I love it with ground kangaroo and kimchi (ok I know that sounds so Aussie but serious kanga meat is sustainable, delicious and a lean red meat so full of iron and the like. A nutritional powerhouse!).
    It’s good with PB… And also tahini!

      Ooooo one of my favorite dinners – which I haven’t had in so long – is steamed kabocha topped with seasoned ground beef (not your kangaroo but my best equivalent), kimchi and avocado! A weird combo perhaps but I’m glad someone else gets it!

    Those vegan bagels ? ? ? Also, I’m so excited to bake your muffins this weekend!!!
    Kabocha plus peanut butter?!! huh… never would’ve thought of that one.
    And honestly your question has stumped me; not quite sure what I’ve been enjoying. I guess this means I need to give myself more time to slow down and recognize those little snippets.
