15 Ways to Stuff! A Stuffed Squash Roundup

If you’ve been following my little journey here for any length of time, you may have put two-and-two together and noticed that I have a thing for my yellow vegetables. Those being… my squash, sweet potatoes and gourds of all kinds. Though for the sake of this post, can we throw technicality aside and just call them all squash? …Yeah? Okay. 

They’re all orange anyways. 

You may have also realized that stuffing things INTO my beloved squash is also a favorite thing of mine. I may even say, doing so is my favorite way to eat…. anything. Bored? Stuff it in a squash. Got leftovers? Stuff ’em in a squash. No clean bowls? Use a squash. 

I think I’ve stuffed almost anything into a squash by this point. 

So to give tribute to my slight obsession beautiful devotion to the stuffed squash, I went back and gathered a roundup of the top 15 ways in which I have made my breakfast, lunch, or dinner that much more delicious. Hopefully these easy “recipes” – if you can call them such – give you some new, totally easy, meal inspiration.  Let’s get stuffed!!

Classic Breakfast Sweet Potato

Peanut Butter or peanut butter ‘sauce’ (2 Tbsp PB powder + 2 Tb almond milk + stevia) / greek yogurt / granola / cacao nibs

Sausage, Kale and Feta

Sauteed kale and onion / chicken sausage / feta / tyme, oregano, red chili flakes, salt and pepper 

Tuna Melt Sweet Potato

Tuna salad made with greek yogurt or mayo / steamed broccoli / aged cheddar

    Oh, gosh, I am SOOOO addicted to stuffing squash and potatoes! In fact, I may have to write a similar post sometime in the future! Lately, I’m addicted to spaghetti squash stuffed with spinach, chickpeas, spices and daiya cheese. Serve with homemade tortilla chips, avocado and green beans for a delicious crunchy, creamy combo. Glad I just had that for supper or I’d really be drooling….
