I went back and forth between naming this recipe “Sweet Potato Breakfast Pizza Crust,” or simply “Sweet Potato Pizza Crust.” Just because I’ve been enjoying it for breakfast by no way means it is only acceptable at this time of day. This ridiculously easy, gluten free, paleo, vegan and flavor packed pizza crust can be used for all your pizza topping needs – morning, noon or night.
I teased you with this guy a couple of weeks ago and knew it had to be bumped up the line of recipes I want to share with you. Because it is just seriously THAT. GOOD.
As far fetched as it was, I first got the idea after seeing this recipe. My creation didn’t end up being any where close to this one – which used almond and oat flour – but it still gave me the idea of making a pizza crust using mashed sweet potato. Like I don’t eat enough of them taters already…
I didn’t feel like using almond flour for such an experiment (#expensive) and wanted to try to simplify it a bit. I actually think it was more this creation of mine (with the help of Ellie’s breakfast bowls) that inspired me more. If I could create a semi solidified “bowl thing” using mainly starch and coconut flour, why not pat it down and make it into more of a base?
I was so pleasantly shocked at how this turned out. It was so sturdy – which is paramount in a pizza crust if you are like me and want ALL the toppings (toppings >> crust all the way) – while still being soft like a real bread dough. Apart from baking the sweet potato, it took mere seconds to whip up and then I could get my toppings made up while it was baking in the oven.
To me, sweet potato needs to be paired with avocado and eggs as frequently as possible. They are like the 3 Stooges. Or Charlie’s Angels. The Three Musketeers. Destiny’s Child. The Bee Gees. I could go on…
They belong together.
So of course that’s how I chose to serve this baby – for my favorite meal with my favorite trio of a combination. But please don’t stop there! Make this sweet potato crust up for dinner and throw on some marinara, cheese and favorite pizza toppings for a more traditional pizza. This crust is ready for anything!
