Sweet Potato Breakfast Pizza Crust (Gluten Free, Paleo, Vegan)

I went back and forth between naming this recipe “Sweet Potato Breakfast Pizza Crust,” or simply “Sweet Potato Pizza Crust.” Just because I’ve been enjoying it for breakfast by no way means it is only acceptable at this time of day. This ridiculously easy, gluten free, paleo, vegan and flavor packed pizza crust can be used for all your pizza topping needs – morning, noon or night.

I teased you with this guy a couple of weeks ago and knew it had to be bumped up the line of recipes I want to share with you. Because it is just seriously THAT. GOOD.

As far fetched as it was, I first got the idea after seeing this recipe. My creation didn’t end up being any where close to this one  – which used almond and oat flour – but it still gave me the idea of making a pizza crust using mashed sweet potato. Like I don’t eat enough of them taters already…

I didn’t feel like using almond flour for such an experiment (#expensive) and wanted to try to simplify it a bit. I actually think it was more this creation of mine (with the help of Ellie’s breakfast bowls) that inspired me more. If I could create a semi solidified “bowl thing” using mainly starch and coconut flour, why not pat it down and make it into more of a base?

I was so pleasantly shocked at how this turned out. It was so sturdy – which is paramount in a pizza crust if you are like me and want ALL the toppings (toppings >> crust all the way) – while still being soft like a real bread dough. Apart from baking the sweet potato, it took mere seconds to whip up and then I could get my toppings made up while it was baking in the oven.

To me, sweet potato needs to be paired with avocado and eggs as frequently as possible. They are like the 3 Stooges. Or Charlie’s Angels. The Three Musketeers. Destiny’s Child. The Bee Gees. I could go on…

They belong together.

So of course that’s how I chose to serve this baby – for my favorite meal with my favorite trio of a combination. But please don’t stop there! Make this sweet potato crust up for dinner and throw on some marinara, cheese and favorite pizza toppings for a more traditional pizza. This crust is ready for anything!

Sweet Potato Breakfast Pizza Crust
Yields 1
You will be amazed at the consistency of this gluten free, vegan and paleo pizza crust. Made with mashed sweet potato and coconut flour, it is high in fibre and beta carotene, and strong enough to house all your pizza topping needs. You'll never miss the real thing!

Ingredients
  1. 1 cup cooked and mashed sweet potato
  2. 3 Tbsp coconut flour
  3. 2 Tbsp arrowroot or tapioca starch
  4. 3 Tbsp water*
  5. 1/2 tsp oregano
  6. 1/2 tsp basil
  7. 1/4 tsp red pepper flakes (optional)
  8. 1/4 tsp garlic powder
  9. salt and black pepper to taste
  10. Spray oil
Instructions
  1. Pre bake sweet potato in oven or microwave unit soft. Spoon out flesh and mash well with a fork.
  2. Pre heat oven to 400 degrees F.
  3. Add mashed sweet potato into a bowl with the coconut flour, starch and spices. *Gradually add the water 1 Tbsp at a time. Apparently coconut flour brands differ, so you may need a bit more or less water than I did. The result should very much resemble bread dough that you can knead with your hands, without being too dry or too wet.
  4. Line a baking tray with parchment paper.
  5. Place the ball of sweet potato dough onto the paper and flatten out into a round crust, about 1/2 inch thick.
  6. Bake in the oven for 20-25 minutes, checking occasionally. The bottom should get a nice golden grilled color but not burnt.
  7. If topping with cheese and other regular pizza ingredients, top the crust with desired toppings and place back into the oven until cheese etc. is melted (approx 5 minutes). Or simply spread with mashed avocado and top with a drippy egg.

    So…. The fact that you made this out of sweet potatoes is really AMAZING. We have two sweet potatoes left, and I’m still hemming and hawing over how to use them. However, this looks really easy… Would I have the patience to make it for breakfast before getting hungry?

    My fave trio… during marathon training, that would be ice cream or yogurt with pb and cereal. Now? I dunno, I want it all!

    This looks amazing, Cora! Love my eggs, sweet potato, avocado combo. And I like my crust slightly crispy but not burnt! Other than that listed above, another favorite food trio is banana slathered with peanut butter and chocolate chips!

    I would totally order this if it were on a restaurant menu. Glad I don’t have to wait for that now! I love pizza dough that is crispy, but has a dough crust. Like a breadstick. One of my favorite trios is zoodles, marinara sauce ,and cheese. I think I’d love this crust in place of zoodles for that trio.

    Oh my goodness, this looks absolutely AH-MAZING. I need it in my life! Eggs, avocado, and sweet potato really are a match made in heaven. I like making sweet potato hash with a poached egg on top, with avocado toast! This looks super yummy, as always. Do you think I could omit the tapioca/arrowroot starch because I don’t have any?

      Yeessss to sweet potato hash with poached eggs. I’ll never get sick of that one.
      No I don’t think so – the recipe is pretty based around the arrowroot starch. Cornstarch would work though if you had that!

    Oh yum, that looks amazing. I am so so making this. I’m inclined to think that using the tapioca variation these could be spread thinner and turned into wraps or thicker for burger buns… mmm.

    omg. this looks amazing. i’d probably top it with siggi’s and kraut, because t hat’s how i’ve been eating carbs all the time lately (bread, bagels, tortilla, squash, sweet potatoes, and today, chips, lol)
