Look guys. I’m back!
It’s been an interesting bit of time since you last saw me. In general – its been good. I was able to catch up on “real life” a bit and nearly clear my long withstanding to do list of non-blog related tasks. I have much to tell and much to catch up on, but I am sure I will be getting to all that in the next few posts (quite excited for a bangin’ week in review next week). That’s not what today is for!
Although I still have a few things to figure out with my new “look” – and I really wanted to have it all underneath me before coming back – my urge to get back to you guys got the better of me and I just couldn’t resist. So I thought what better way to step back in than with good plain foodie porn. Que What I Ate Wednesday. Thanks Jenn/Arman/Laura!
Monday was a holiday up here in the north. That meant I had two days off in a row for the first time all winter (my rehearsals always go on Saturdays so I’ve gotten used to glorious one day weekends). It was weird. So nice…but weird. You know when you have nothing you have to do and you feel like you are doing something entirely wrong?
Regardless. An extra day off meant an entire day of doing basically nothing.
Coconut flour pancakes + Cookie Butter drizzle + Cranberries
Days off nearly always mean pancakes, no? I’m not sure how that came to be a thing, but hey, I’ll totally follow along. After seeing Arman’s latest concoction, the fluffy factor was just too insane to resist. I whipped up his coconut flour cakes and drenched them in cookie butter drizzle (speculoos spread thinned with almond milk) and slightly warmed fresh cranberries. I’m not sure where the combination idea came from, but I woke up seeing these colors in my head and that was that.
Seriously. His pictures do not lie. These were clouds. of. heaven. And the weird combination of sweet cookie spread and tart cranberries was da bombbbb.
My one and only priority for the day was a short meeting with a cast member. We were meeting just after noon so I packed my lunch to have on hand for when the need arose. Sigh. Can’t even get away from the tupperware on a day off.
Acorn Squash stuffed with salsa chicken and spinach + steamed broccoli + 1/3 an avocado
I’m still going strong on the stuffed squash obsession. Everything and anything are going into those babies. Salsa chicken is the easiest chicken trick out there. Throw a few chicken breasts or thighs in a slow cooker with a cup of salsa, cook on low, shred… bam. Meals for a week.
I’m also becoming more diligent about those healthy fats, so I threw in the last 1/3 of an avocado. I want my body to absorb all those nutrients after all. And I mean… avocado.
Back home I came to an afternoon of cooking and cleaning. I munched on a couple pieces of my latest homemade freezer chocolate bark with maca and crystallized ginger. Don’t you worry. This recipe, amongst others, are comin’ your way.

I tend to like to pretend I’m sophisticated when I have a day off. I mean, any day I get to eat off a real plate is pure sophistication for me. But being able to sit down with a glass of red, knowing I have no where else to be, is such an extra luxury.
I made up a new batch of my vegan sausage patties. These babies are so good. Don’t be intimidated by the ingredient list. I swear its 90% spices. I roasted up some of my beloved brussels, chopped up some cauliflower rice and drizzled it all in a balsamic reduction. Easy. Simple. Delicious.
Feelin’ like a real lady.
You are never too old to receive Valentines Day care packages in the mail from your beloved parents. Especially when it contains Rogers Chocolate. And when you had the valentines day that I had, you eat the chocolate.
I’m happy to be back guys! This whole blog world will be a continual learning experience, but I’m pretty proud of all the things I’ve figured out thus far (being the least tech savvy person you’ll meet). I have much more to go, but I hope you stick around and join me as I grow through some continued changes. We’ll drink coffee and eat yummy food and ponder all lifes’ questions together. Date?
