Foodie Summer Bucketlist (WIAW)

I’m taking a lesson from my girl Sarah today (the bucketlist headmaster).  It’s time to get out the foodie summer bucketlist. 

I decided to compile a list of (some of) the meals, foods, ingredients etc. that I’d like to get around to trying/making this summer. APART from the usual and inevitable cookies, muffins, bars and salads that will no doubt happen. I’ve basically got a running list going in both my head and on my phone, so I figured why not make it a little more concrete. 

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

And since its Wednesday, I guess it’s a double whammy food day.  Thanks to the usual gang for also helping me celebrate a day of good eats.

Of course, my notion with “goals,” has changed exponentially over the past couple years. I don’t so much set them anymore, in lieu of striving to just live in the moment and take change as it comes. There is nothing saying I must get around to all of these foods – I most likely will not – but that doesn’t mean I still don’t enjoy a good list. 

In no particular order, some of my goal foods may be recipes (of yours?) that I’ve had on my list for far too long, nostalgic meals, restaurants, or new ingredients, and some may be recovery related fear foods or past favorites that I’d like to conquer by the end of the summer.

(Breakfast)

Strawberry Peach Scone + Decaf

  • Smoothies (or, most likely smoothie bowls since I’ve accepted that drinking my meals will just never satisfy me). Specifically something with lots of chocolate and hemp like this guysomething with beets like this beauty, and definitely this combination to appease my current ginger obsession
  • Chinese Food take out from our local Chinese restaurant.  And there must be chicken balls. 
  • Lemon cake – from a box – with plain vanilla ice cream. 
  • Kat’s chia pudding. I’ve also accepted I am just not a chia pudding fan (those little gelly balls!? Seeeerious heeby geebies) but Kat put the blending idea into my head and I’d really like to give it a shot. 

(Lunch)

“All the Veg” sandwich with Monteray Jack and Dill Mayo on Dark Russian Rye bread

  •  SAUERKRAUT. Ugh. Guys, I’ve tried. I can make bread and kombucha, but both my attempts with kimchi and sauerkraut have failed misssserably.  I will get this. 
  • ALLLLL the no bake desserts (like letsgetupandlive’s vegan fudge brownies (CHECK) and Michele’s Paleo Lemon Bars (CHECK)).  Just see my pinterest board for the whole list.
  • Experiment with chickpea flour – chick pea flour flat breads?
  • Dairy Queen Blizzards
  • And then this healthier version of said Dairy Queen Blizzard

(Snack)

WIAW foodie summer bucketlist

Gluten Free Black Bean Brownie + Creamy Americano 

  • Cheese bagels with butter. All the bagels for that matter. Thanks to the constant craving I get from this lady. 
  • Steak and soggy garlic bread
  • Full fat yogurt
  • This Lemon Coconut cake (made with cauliflower!!), including my new discovery of coconut whipped cream
  • Fried eggs and hash browns for breakfast. Preferably at a greasy diner. 
  • Some sort of chocolate hemp seed no-bake bar I am going to create

(Dinner)

Homemade salmon burger open face on white kaiser roll with lemon mayo, spinach, tomatoes, pickles and fresh dill + sweet potato fries

Seriously the best meal I’ve had in ages. So. Good. 

  • Traditional overnight muesli made with real cream
  • Sushi rice and homemade sushi bowls, such as this one
  • Real berry cobbler with real vanilla ice cream
  • ALL the kombucha. My batch should be nearly finished. 
  • Caesars and sweet cocktails. I could really use a good…mature… night. 

(Dessert)

1 banana “nice cream” + chocolate pudding + hemp seeds + cacao nibs

Adult sundae?

Did anyone else just get hungry?

    Gah Cora! I was feeling really satisfied after eating my lunch but now I am hungry again!
    What a list for the summer, very exciting and so many good eats!
    I’m heading to Melbourne next week and already have a mini foodie bucket list for my trip, especially seen as david and I rarely eat out normally. Mexican food, amazing gelato and iced custard is on my list, along with GF pizza, hot chocolates, lots of wine and cheese and I really want to try my first Acai bowl! So excited!

      Have you guys been to Melbourne before? This will be such an awesome getaway for you and David. Please have ALL the wine and cheese for me.

        Iced custard was a new one to me too – basically ice cream churned with egg yolks rather than the whole egg (just like making custard). Just sounds so good!
        Will let you know about the acai bowl -it’s got quite a hype to live up to!
        First time to Melbourne for David and I, heck it’s the first time we have been anywhere in Australia except Perth. We moved here having never been to the country before!

    Yes, I get hungry only scroll through this list! Sushi bowls are life and so easy to make (definitely recommend one with avocado and sesame seeds). I love lemon desserts now, and I think the lemon coconut cake with cauliflower looks fancy enough for great start of summer.

    My summer foodie bucket list is to NOT go to the same places all summer long, make the same recipes all summer long. If I can accomplish that, then I am SUCCESSFUL. Because right now, I am just returning to things that I know and am comfortable with.

    Yum!! This is a fun idea! I’d like to try a few of the restaurants walking distance to my apartment that I havent been to. They do outdoor seating in the summer so I think I’ll make those my summer bucket lists. I also hope to eat some form of a taco once a week 😀

      Oh nice!! Outdoor seating and rooftop patios are two of my favvvorite things in the summer. Especially if they are walking distance to home (bring on the cocktails!)
      Ah tacos. I should have tacos on my list.

    YES to blending the chia pudding!! It completely changes it up. Yes its an extra step, but so worth it to me. In fact, that’s the only way I eat cottage cheese! I dont like the consistency of it, but I love how fluffy it gets when its blended, so that’s how I eat it 🙂

      I wouldn’t mind the extra step in the least – if it can get me eating the little weird things.
      Oh god I agree completely on cottage cheese. The day I discovered bending it changed everything! It’s like natural fluffy icing!

    Full fat yogurt!!!! The Greek Gods full fat yogurt is absolutely amazing–I used to eat it for dessert. Not much anymore (honey/fructose and lactose, sigh), but if you can, I say go for it!
    I love the idea of pairing nice cream with chocolate pudding. Yum!

    That lunch looks delish!! Also- Dairy queen blizzards are my favorite. I love the cookie dough one!! So So good. Those sweet potato fries look great too. Lots of good eats here 🙂 Have a lovely day girl!

      I can’t for my first DQ blizzard of the season. I don’t think I’ve ever had the cookie dough. I usually go for good ol’ skore. Mmmm.

    Homemade salmon burgers are seriously so good. You definitely made me so hungry… and it’s only 10:30 in the morning! I’m glad my bagels inspire you too. My favorite way to start the day :p

    I love the idea of a summer food bucket list!! Mine definitely includes lots of grilling and using our smoker, as well as taking stuff to the park and grilling there! But I totally want to try making my own sauerkraut now!!

    Hahhaha I’ve had so many fails trying to make sauerkraut too. One time I got a text from my boyfriend “WHAT IS THIS HORRIFIC SMELL COMING FROM OUR KITCHEN” (oops) I’ve added it to my bucket list this summer as well…do it right this time.

    LOL I can’t just drink a meal, either – though I like protein shakes. (The ones that are just fruit? No, not a meal, to me…) So I make a shake and then eat cereal or muffins or something – works for me!

    Mine is fruit ice cream. Somehow I’ve acquired an ice cream maker… and blending the cream with ripe peaches… I need to try this.

      When/if I make a smoothie for breakfast I HAVE to have a side of toast or muffin. If I don’t chew something – even if the smoothie is loaded with good stuff – my body will be all, “but you didn’t eat yet…”
      Ooooo homemade fruit ice sounds both delicious and fun! I hope its a hassle free process. Could be great to have stored away in the freezer all summer.

    I totally love this, and smoothie bowls are on my list too, because I think they combine my love of cereal + icecream in a big yummy breakfast form. I would love to make a food bucket list, but I’m not sure if I should because I can be a little overly obsessed about lists. I know. I’m kind of weird. But… I would like to try one new recipe from one of my favorite bloggers every week and develop my own recipe every week. I guess that’s my small ‘food bucket’ list.

      Not weird – I get obsessed about lists too. That’s why I’ve made it clear to myself this is just a “fun” list and if I don’t get around to half the things – thats totally okay.
      I think that goal is AWESOME! I’m looking forward to hearing of all your own recipes and the ones you make from others!

    I love bucket lists!!! Aren’t they so fun? I bet you could master the chick pea flour flatbread, especially since I’m such a fan of your sweet potato flatbread/pizza. That homemade sushi bowl sounds wonderful, I may have to add that to my list. Obviously, making my own kombucha is on there and I will be reaching out to you once I start! I’d also love to bake bread from scratch, make lots of buddha/power bowls (everything in a bowl, right?), have a sophisticated wine and cheese night (with pairings), make grilled pineapple and veggie kabobs (we need to get a grill), make some sort of watermelon/basil cocktail drink, have some real clam chowda up in Rhode Island, catch a fish and eat it, and the list goes on. I’m so excited about all of these!

    My summer bucket list was to get back to eating banana ice cream regularly (and overcome my laziness to make it) and trying new flavors. I’ve made rocky road, coconut, almond fudge and butter pecan already. It is so worth it and I enjoy the experience so much more!

    Such a great idea to make a summer bucket list for foods! So far, my only “items” are lots of good gluten free meals at Disneyland, trying some new smoothie bowl flavors and maybe making some homemade cookies with banana chips as a crunch factor. We’ll see what else I end up craving!

    Wow, my summer bucket list likely includes lots of fruit, ice cream and smoothies. AND since i’m due June 21, my rest of summer bucket list includes things I haven’t had in a while – sushi, unpasteurized cheese, sparkling wine, smoked salmon, YUM!

    This is the most perfect example of balance in my opinion. This list screams variety. You should most definitely start with a DQ blizzard, if you can get it the Turtle Caramel Pecan Blizzard (it is the best). I am actually excited for your taste buds.
