Mornings at Home: A Week Of Breakfasts

I’ve been really enjoying my mornings at my new home.

I’ve always enjoyed the morning as my favorite time of day, but the coziness of my new apartment has been really, really nice. 

Sometimes Dan and I are both home. When this happens we eat together at our table, though often we’ll make different things for ourselves.  When Dan is gone to work and I have a morning off, I’ll tend to put in a bit more time to make something and enjoy it at my little window desk. There’s no real planning or stress, as was often the case in my past. Rather, the mornings just seem to seamlessly go where they want to go. Both situations – alone or together – are each lovely in their own way, though I must say having company will always win over. 

It’s been fun to look over my past week (or two) of breakfasts. I’m realizing how much I like to keep things varied. I really don’t ever have two of the same breakfasts in a row. It’s just how I am! Definitely not a creature of habit, at least in the culinary department. I find I need a large balance of different things, even throughout a single day. That being said, it’s interesting to see the repetitions I do make. I very often have meals that are very similar – with the same base – but always with a different side or topping from what I had before. As they say in asia: same same but different!

Here’s a look at a past week of my breakfasts at home:

Homemade quick loaf with different sides

Gingerbread loaf + post pic peanut butter + berries 

I definitely loved the gingerbread loaf I mentioned making here. It’s been such a nice christmasy way to start my day. It’s also one of those tastes that could go sweet or savory for me. Which, since Dan isn’t a fan of gingerbread and thus I had many slices to go through myself, it was nice to change things up.

I made a big batch of cookieandkate’s pumpkin pancakes and added molasses and spices to follow along my gingerbread trend. Once again, rotated between sweet and savory toppings.

I had some leftover butternut squash from… who knows what it was… and I was determined to not let it go to waste. So my next pancake foray were butternut squash cakes! I’m pretty sure I first got the idea when I saw these babies, though made something a little closer to this recipe.

Avocado ‘n’ stuff

My favorite savory combination is toast plus avocado plus white cheddar cheese and sliced tomato. With lots of salt. I didn’t have any white cheddar on this particular day, but swiss made a nice substitute.

Then I tried my hands at this nifty recipe for a 2 minute flourless english muffin. I still had more mashed butternut squash in my fridge, so I threw that in instead of the applesauce and it worked a charm! Gave it a nice little orange hue, too.

Easily grabbed baking 

To be completely honest with you, as much as I love my creative recipes and making things from scratch, my favorite breakfast – simply for taste – is still a big ol’ piece of cafe baking. Made not by my own hands. I think this may still go back to all the years where I never even touched these kinds of things. And I think out of that category, anything with cheese is the winner. That still surprises me.

Even if I have lots of time in the morning, I’ll still choose to take a bagel or piece of baking out of the freezer. Convenient, quick and delicious.

But when I haven’t been eating baking or craving pancakes, I’d have to say my most frequent craving in this past week has been hot oatmeal. That seems to be all I want. Usually its just a very standard banana and peanut butter combination, but this one morning I changed things up slightly with a delightful little combo. I still had a TINY bit of butternut squash to use (geez louise that went on forever) so I got creative and made some squash oats. 

1/2 cup rolled oats + mashed butternut squash + mashed banana + cinnamon/cardamom/cloves/nutmeg + maple brown sugar + peanut butter + dried cranberries + coconut

    You are a master with the butternut squash! I never never thought to add it to oatmeal or pancakes, but now I have the idea in my head, if I ever have more squash to be used.     I seriously seriously love how varied your breakfasts are; you take so much of God’s bounty and turn it into yummy things like butternut squash cakes, oatmeal, yummy toasts, bagels, and soooo much more. It makes me HUNGRY! My favorite breakfast would probably be french toast or waffles or pancakes or a yogurt bowl. Every time I’ve had oatmeal lately, it hasn’t gone well with my stomach, sadly, but there are so many other options, I’m just going for those! MERRY CHRISTmas Cora! <3

      I’m allll about the oatmeal right now. My mom just made us a batch for breakfast and we topped it with homemade maple syrup from my uncle’s farm. Umm….. spoiled!?!

    So many yummy breakfasts! I’ve actually been doing pre and post workout breakfasts lately, so nothing really worthy of the term “breakfast” lol Basically some homemade energy balls for pre-workout and then a smoothie post workout! My first real meal is typically lunch which normally has allllllll the goods šŸ™‚

    I’m the same! Love variety in my meals but elsewhere in life I enjoy more of a routine. Funny how that works.

    Seriously I would eat all of these. Definitely eyeing that improvised squash english muffin, bowl of oatmeal and the gingerbread loaf. A girl after my own heart.

    wow, i could seriously take some notes for you my friend! your breakfast skills are on point. top notch! i love how you change it up and keep it interesting, and give detail to your plates. that is love. it’s self care and so important. and lovely to see.
    i’m not much of a breakfast person per say, but i do love my morning ritual of lemon or ACV water, detox tea, and some green powder drink. that’s about all i want till later on. i like brunch and lunch , basically i like to eat when i can order a drink. hahaha kidding!!! well, not really but ya know šŸ™‚

    Such delish eats! I definitely prefer to switch things up, but I, like you, have been craving hot and filling oats like nothing else (it’s been SO cold in nyc), so I had my fave chocolate pb &j bowl of oats two days in a row hehe. But other than that, I’ve been switching it up. And I also made gingerbread for Christmas. I wrote a post of recent eats here if you’re curious. šŸ™‚

    Hey Cora! I tend to be in a routine for breakfasts — fresh fruit, yoghurt, home made granola on top for some crunch. I don’t always get a lot of dairy or fruit in my diet so found this was a good way to get at least some during the day. Lately I’ve been off on breakfasts so your blog gave me some new inspiration to try some new tastes. I have been doing some oatmeal but will add some new elements now. Thanks!

    Breakfast is high up there on my list of food loves, and you’re making me want to buy English muffins. I did pick up a loaf of English Muffin Bread from Breadsmith today so that will certainly suffice in the meantime. Would you believe I’ve never had avocado toast? I do lots of avocado,cheese, and lettuce sandwiches though. šŸ™‚

    I miss having my morning time. One day…
