Recent Eats. And uh, Lots of Cake... (What I Ate Wednesday)

Recent Eats. And uh, Lots of Cake…

Let’s clear the pictures off my phone, ya? I mean uh, let’s celebrate food and get some meal inspiration. Happy Wednesday you foodies.

Breakfasts. Going savory, apparently…

A mix of quinoa, shredded kale, parsley, cucumber and grape tomatoes in a creamy miso/maple dressing topped with a fried runny egg.

Three words: Big. Cheese. Scone

Recycled pic but finished off that farmers market peameal bacon

Lunches. Wraps and salads…

A really lovely mix of quinoa, shredded cabbage and grape tomatoes in a creamy nutritional yeast, tamari, maple syrup dressing

I made a salad of greens, avocado, carrot, red pepper, avocado and hemp seeds, stuffed it in a wrap along with tofu and garlic mayo (extra on the side for dipping) and served the rest of the salad on the side. Plus more of my homemade ginger-ale I brought up last week: ginger, soda water, agave

  Same wrap as above

Plus a side salad of massaged kale, tempeh, avocado, pistachios and jicama

Massaged kale, grilled sweet potato, red pepper and zucchini, sunflower sprouts and goat cheese

Dinners. More take homes from work...

Steamed broccoli, grilled sweet potato, micro greens and sunflower sprouts, beet sauerkraut, and adzuki beans on a bed of brown basmati rice

Tofu, jicama, raw tomato and cucumber, peanuts and cabbage in a thick thai peanut sauce on brown basmati rice

Dan and I had this incredibly lovely night where we made homemade caesar salad. Meaning, everything from scratch. I made the dressing completely by hand, stinky anchovies and all. We broiled up a freshly baked local baguette with garlic and butter, and seared the freshest market salmon with butter, garlic, salt and pepper. We even grated fresh parmesan – as in from the block – to top it all off.

It was really special to put so much homemade, careful effort into making a meal for yourself.  Homemade food and the satisfaction in knowing it is fresh, real and prepared from the ground up is a really lovely feeling.

And then there’s been, uh, a lot of cake. In various forms…

Last of these brownies with collagen matcha frosting + random piece of chocolate donut + strawberries

Two store bought maple cupcakes given to by a friend + dark chocolate + strawberries

Two vegan vanilla bean cupcakes + strawberries. ‘Cause why have one when you could have two…?

And then this is chocolate cake.

Tell me,

Do you enjoy making meals from scratch scratch?

Do you like jicama? Kind of a funny veggie isn’t it?

What’s your favorite cake?

    That *is* chocolate cake.
What a great date idea to create a nice meal with your bf. The Fuzzy Face and I haven’t cooked a meal together like that in a long time, unless frying bacon counts. (He’d be into the stinky anchovies too. Me not so much.) Glad you got to spend that time with him.

Yeah, it was really nice Joyce. We hadn’t done that in forever, and never have time to anymore it seems. Which is why it felt extra nice. Hopefully you and fuzzy face and make room to do something similar soon.

  2. Susie @ Suzlyfe | 14th Jun 17

I want to be you when I grow up. your food is on point. Like legit on point. My diet right now consists of carbs and candy.

Hey, “C” is my favorite letter. So those two things are totally fine in my books. Plus. Soul food.

  3. Patricia @Sweet and Strong | 14th Jun 17

OMG all the colorful veggies and cake, I want all your food! And I love making caesar salad at home, I def get a little grossed out adding the anchovy though, but that’s what gives it the best flavor!

Its so weird. When I was making it I kept thinking, who the hell discovered putting ANCHOVY paste in to make a salad dressing? That person had some strange curiosity. But also, apparently brilliant?

  4. Evangeline | 14th Jun 17

That chocolate cake…is too lovely for words. Cooking from scratch feels exciting and satisfying. I appreciate my food more when I know that I helped make each part. Jicama seems like a neat veggie. I’ve haven’t tried it, but I like saying the word. Hhhick-em-ma. So fun.

Lol. And I love watching people who’ve never heard of it before try to pronounce it. Its crunchy but fairly tasteless. So, kinda fun to add to dishes?

  5. Emily Swanson | 14th Jun 17

That is some serious chocolate cake. I would LOVE to dig into that with you. And I love cooking from scratch; it’s a humbling experience. I realize how much I need to trust God for the result and not be cocky about the result. I’ve had many flops and many victories which is always fun. 🙂

And I love all the color; it makes me think of how great and awesome God is and all the variety He loves to make in the world.

It definitely is a humbling experience and I think is a really good practice for letting go of expectations or perfectionism. More often than not our final product is not the same as we “dreamed” it would be, but realizing you put in the work yourself hopefully helps you see the beauty that it still turned out to be.

Thanks Em. You always help me remember how special the beauty of food is.

your caesar salad night sounds magical!!! cooking really can be joyful. i love to have nice music and a wine as i’m cooking but just can’t do that these days, not realistically or logistically. i used to love making boefe bourginione from scratch and spend literally 24 h ours with all the steps. it was so much fun to make every component and enjoy some french wine during the process, and then enjoy the final dish with more vino of course. i love classical food, but also modern stuff. i love good food! and your meals are always so joyfully inspiring. like i really can’t wait to make your vegan sauces and the miso sauces. ughhhhhhh why can’t i have more time do all the cooking adventures? oh well, i’m not making major food goals but i’ll get around to making a dish that i actually get to enjoy making soon enough.
cake wise i love any soft cake. sticky toffee pudding with extra stick goop makes me happy!!!

    • Cora | 17th Jun 17

Wow. Oh man cooking from scratch while enjoying a glass of red and some classy music… that’s what dreams are made of, huh? Of course… reality comes in and we don’t often get to actually make these dreams a reality, BUT, the one or two times we can…. we will let the experience soak into our bones and savor every licking moment of it. I think you and I need to make it a goal to give ourselves this exact experience at least ONE time this year. You with me? You make my miso gravy, and I’ll find myself some beef stew recipe that will make my taste buds explode. Cheers to you soul sister.

Not lying: my stomach literally grumbled for a moment while scrolling through this collection of amazing meals. Granted, it might just be doing its work aka digesting but still. Your food always makes me hungry. All those colours! If I was living closer, I’d invite myself to lunch or dinner at your place.
Cooking from scratch – if this allows for using pasta, canned beans and such little ‘shortcuts’ – is how I grew up eating and learning to cook/bake so that’s what I enjoy. It’s more fun when cooking for a crowd than just for me, though.
Also: why in the world do you get kale this time of the year? It’s not fair [cue dramatic sigh].

    • Cora | 17th Jun 17

You wouldn’t have to invite yourself. I’d make sure you were joining me.

Because yes, cooking for yourself is satisfying, but it is SO much more fun when you have other mouths to enjoy it. You don’t get kale at this time!?!? It’s summer…!

  8. Kat | 14th Jun 17

SO JEALOUS of all that cake. OMG – gimme. I’ve been around cake twice in the past week and couldn’t have any due to it not being gluten-free. UGH. It’s like torture – no lie!
Which is why I’m totally making my daddy a gluten-free cake for Father’s Day this weekend 😉 Wait – is that wrong?

Wish I could have shared it with you, but alas, twas not gluten free. So don’t feel too tortured.

NOT WRONG AT ALL. You make that cake for you Dad. And you enjoy it for yourself JUST as much. You both deserve it <3. But uh, can I come?

  9. Patric@looneyforfood.com | 14th Jun 17

If its not chocolate cake I don’t bother! Everything looks so good, your salads are so bright and colorful. I do like jicama!

  10. Ellie Pell | 14th Jun 17

Mmmm for me it’s been cookies, in all forms. I had cupcakes this week for a coworker’s birthday, and there is nothing more perfect than a fresh cupcake and fresh frosting made by your baking genius friend. Now I’m spreading the frosting on my cookies =P
I don’t really cook too much from scratch. I boil regular pasta etc, but I make a lot of stuff from scratch at work so it works out 🙂

      Frosting. Cookies.

…. excuse me. What else did you say?

  11. Sarah @ Bucket List Tummy | 14th Jun 17

You have my sweet tooth goin crazy with envy. How did you do the ginger in soda water? How much did you use for your ginger ale? I may need to try that! And homemade dinners, down to the dressings, are THE BOMB DOT COM. Don’t you feel so good afterwords? Go you and Dan.

    • Cora | 17th Jun 17

Ooooo so either find juiced ginger or you can process like an inch of peeled ginger root in a few tablespoons of water to make a strong concentrate. Then add it to soda water, add some lemon and agave or honey. Play around with how much you like. Just like dinner – making something from scratch feels sooo good.

  12. Lyss | 14th Jun 17

ah yessss chocolate cake hehe. looks so good and fluffy! i had a savory breakfast today and it felt so strange. Usually I go with the sweet ones like oats or cereal! Wraps are always a perfect lunch for me 🙂
